Simply Amazing Sunday's Recipe of the Day!


Simply Amazing Diet Chili
Serves: 6     Serving Size: 1 1/2 cups
Ingredients
2 lbs Ground Turkey
1 Onion, medium size, chopped
1 tbsp Worcestershire Sauce
2 Zucchini, medium size, halved and sliced
1 Green Bell Pepper, cored and diced
1 Red Bell Pepper, cored and diced
1 (15oz)can Kidney Beans, drained and rinsed
1 (15oz)can Black Beans, drained and rinsed
1 (15oz)can Garbonzo Beans, drained and rinsed
1 (28oz)can Diced Tomatoes, un-drained
3 cloves Garlic, minced
1 tbsp Chili Powder
1 tsp Paprika
1 tsp Oregano
1/2 tsp Cumin
1/2 tsp Salt
1/4 tsp Pepper

Directions
In a large pot brown the ground turkey with the onions and Worcestershire; drain off the excess fat.  Place vegetables and half of the garlic in pot and sautee until tender.  Add beans and un-drained tomatoes. Bring to a boil, then simmer for 15-20 minutes.  Add spices and the rest of the garlic; mix well.  Simmer for five more minutes.

Variation:  For a vegetarian version, simply take out the ground beef.
